Ingredients

  • 2 pounds beef chuck roast
  • 1 pound lamb shoulder
  • 4 dried guajillo chilis
  • 2 dried ancho chilis
  • 1 tablespoon cumin
  • 1 tablespoon oregano
  • 4 cloves garlic
  • 1 onion, chopped
  • 4 cups beef broth
  • 2 bay leaves

Instructions

  1. Soak the dried chilis in warm water for 15 minutes.
  2. In a blender, combine soaked chilis, garlic, onion, cumin, and oregano, then blend until smooth.
  3. In a large pot, add the beef and lamb, pour the chili mixture over, and add the beef broth and bay leaves.
  4. Cover and simmer on low heat for 3 hours, until the meat is tender.
  5. Shred the meat and serve in bowls with broth.

Notes

  • For a spicier kick, add some jalapenos to the chili mixture.
