A delightful Vanilla Bean Cake topped with a luscious Strawberry Cream Cheese Frosting.

Ingredients

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • ½ cup unsalted butter, softened
  • 1 cup whole milk
  • 3 large eggs
  • 1 tablespoon vanilla bean paste
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 8 ounces cream cheese, softened
  • 1 cup strawberries, pureed
  • 2 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs, one at a time, mixing well after each addition.
  4. Stir in the vanilla bean paste.
  5. In another bowl, combine the flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet mixture alternately with the milk, starting and ending with the flour.
  7. Pour the batter evenly into the prepared pans.
  8. Bake for 25-30 minutes or until a toothpick comes out clean.
  9. Allow the cakes to cool completely before frosting.
  10. For the frosting, beat together the cream cheese and pureed strawberries.
  11. Gradually add the powdered sugar until it reaches desired consistency.
  12. Spread the frosting on top of one cake layer, place the second layer on top and frost the top and sides.

Notes

  • Store leftovers in the refrigerator for up to 3 days.
  • For extra flavor, add some strawberry pieces to the frosting.
