  • ½ cup milk
  • 2 cups fresh strawberries, sliced
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a bowl, cream together the butter and sugar until light and fluffy.
  3. Add in eggs one at a time, mixing well after each addition.
  4. Stir in vanilla.
  5. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet mixture, alternating with milk until just combined.
  7. Fold in the strawberries.
  8. Divide the batter into the prepared cupcake liners.
  9. Bake for 18-20 minutes or until a toothpick comes out clean.
  10. Let the cupcakes cool completely.
  11. Whip the heavy cream with powdered sugar until soft peaks form, top the cooled cupcakes with whipped cream and additional strawberries.

Notes

  • For added flavor, mix some strawberry puree into the whipped cream.
