  • 1 pound chicken thighs
  • 4 slices turkey bacon
  • 2 cups chopped carrots
  • 1 cup diced potatoes
  • 1 cup chopped celery
  • 1 onion diced
  • 4 cups chicken broth
  • 2 cloves garlic minced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a skillet, cook the turkey bacon until crispy, then set aside.
  2. In the slow cooker, combine the chicken, carrots, potatoes, celery, onion, garlic, thyme, salt, and pepper.
  3. Pour the chicken broth over the ingredients and stir to combine.
  4. Crumble the cooked turkey bacon on top.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  6. Once cooked, shred the chicken with two forks and stir back into the stew.
