Ingredients

  • 2 pounds chicken thighs
  • 4 cups chicken broth
  • 3 cups diced potatoes
  • 2 cups chopped carrots
  • 1 cup diced onion
  • 3 cloves minced garlic
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt to taste
  • Pepper to taste

Instructions

  1. Place the chicken thighs at the bottom of the slow cooker.
  2. Add the chicken broth, potatoes, carrots, onion, garlic, thyme, rosemary, and bay leaf on top.
  3. Season with salt and pepper.
  4. Cover and cook on low for 6-8 hours or high for 4-5 hours.
  5. Once cooked, shred the chicken and stir it back into the stew.
  6. Remove the bay leaf before serving.

Notes

  • This stew can be customized with your favorite vegetables.
  • For a thicker stew, mash some of the potatoes before serving.
