- 2 pounds chicken thighs
- 4 cups chicken broth
- 3 cups diced potatoes
- 2 cups chopped carrots
- 1 cup diced onion
- 3 cloves minced garlic
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 bay leaf
- Salt to taste
- Pepper to taste
- Place the chicken thighs at the bottom of the slow cooker.
- Add the chicken broth, potatoes, carrots, onion, garlic, thyme, rosemary, and bay leaf on top.
- Season with salt and pepper.
- Cover and cook on low for 6-8 hours or high for 4-5 hours.
- Once cooked, shred the chicken and stir it back into the stew.
- Remove the bay leaf before serving.
