  • 1 pound boneless, skinless chicken breasts
  • 1 cup salsa
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • salt and pepper to taste
  • 4 cups cooked rice
  • 1 cup shredded cheese
  • 1 avocado, diced

Instructions

  1. Place chicken breasts in the slow cooker.
  2. Add salsa, black beans, corn, cumin, chili powder, salt, and pepper.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  4. Once cooked, shred the chicken with two forks and stir to combine.
  5. Serve over cooked rice and top with cheese and avocado.
