2 cups sushi rice
2 1/2 cups water
1 tablespoon rice vinegar
1 pound fresh salmon, skin removed
1 tablespoon soy sauce
1 tablespoon mayonnaise
1 teaspoon sriracha
1 avocado, sliced
1 cucumber, thinly sliced
1/4 cup green onions, chopped
1 tablespoon sesame seeds
Instructions
Preheat the oven to 350°F (175°C).
Rinse sushi rice under cold water until the water runs clear. Cook the rice with water in a rice cooker or on stovetop according to package instructions.
Once cooked, mix in rice vinegar and let it cool.
In a bowl, mix together salmon, soy sauce, mayonnaise, and sriracha until well combined.
Spread the sushi rice evenly in a baking dish.
Add the salmon mixture on top of the rice and spread it evenly.
Bake in preheated oven for 15-20 minutes until the salmon is cooked through.
Remove from oven and top with avocado, cucumber, green onions, and sesame seeds before serving.
