  • 2 cups sushi rice
  • 2 1/2 cups water
  • 1 tablespoon rice vinegar
  • 1 pound fresh salmon, skin removed
  • 1 tablespoon soy sauce
  • 1 tablespoon mayonnaise
  • 1 teaspoon sriracha
  • 1 avocado, sliced
  • 1 cucumber, thinly sliced
  • 1/4 cup green onions, chopped
  • 1 tablespoon sesame seeds

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Rinse sushi rice under cold water until the water runs clear. Cook the rice with water in a rice cooker or on stovetop according to package instructions.
  3. Once cooked, mix in rice vinegar and let it cool.
  4. In a bowl, mix together salmon, soy sauce, mayonnaise, and sriracha until well combined.
  5. Spread the sushi rice evenly in a baking dish.
  6. Add the salmon mixture on top of the rice and spread it evenly.
  7. Bake in preheated oven for 15-20 minutes until the salmon is cooked through.
  8. Remove from oven and top with avocado, cucumber, green onions, and sesame seeds before serving.

Notes

  • Add more sriracha for extra spice if desired.
  • This dish is best served warm.
