Deliciously indulgent roasted cherry brownies that bring a delightful fruity twist to a classic dessert.

  • 1 cup fresh cherries, pitted and halved
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/2 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine the pitted cherries with a tablespoon of sugar and set aside to macerate.
  3. In another bowl, whisk together the melted butter, sugar, eggs, and vanilla until well combined.
  4. Sift in the flour, cocoa powder, salt, and baking powder; fold until just mixed.
  5. Gently fold in the macerated cherries and chocolate chips.
  6. Pour the batter into a greased brownie pan and smooth the top.
  7. Bake in the preheated oven for 25-30 minutes or until a toothpick comes out with a few moist crumbs.
  8. Allow to cool before slicing into squares.
