  • 1 ½ cups chocolate cookie crumbs
  • ¼ cup sugar
  • ½ cup unsalted butter, melted
  • 16 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup mint chocolate chips
  • 1 cup heavy cream
  • 2 tablespoons cocoa powder
  • 1 tablespoon green food coloring (optional)
  • ½ cup chocolate shavings for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix chocolate cookie crumbs, sugar, and melted butter. Press mixture into the bottom of a springform pan.
  3. In a large bowl, beat cream cheese until smooth. Add powdered sugar and vanilla, mixing until well combined.
  4. Fold in mint chocolate chips.
  5. Spread cream cheese mixture over the crust in the pan.
  6. In another bowl, whip the heavy cream until stiff peaks form. Gently fold whipped cream into the cream cheese mixture.
  7. Add cocoa powder and food coloring if desired, mixing until combined.
  8. Smooth the top and refrigerate for at least 4 hours or until set.
  9. Garnish with chocolate shavings before serving.

Notes

  • For a stronger mint flavor, consider adding mint extract.
  • Make sure all ingredients are at room temperature for best results.
