- 1 ½ cups chocolate cookie crumbs
- ¼ cup sugar
- ½ cup unsalted butter, melted
- 16 ounces cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup mint chocolate chips
- 1 cup heavy cream
- 2 tablespoons cocoa powder
- 1 tablespoon green food coloring (optional)
- ½ cup chocolate shavings for garnish
- Preheat the oven to 350°F (175°C).
- In a bowl, mix chocolate cookie crumbs, sugar, and melted butter. Press mixture into the bottom of a springform pan.
- In a large bowl, beat cream cheese until smooth. Add powdered sugar and vanilla, mixing until well combined.
- Fold in mint chocolate chips.
- Spread cream cheese mixture over the crust in the pan.
- In another bowl, whip the heavy cream until stiff peaks form. Gently fold whipped cream into the cream cheese mixture.
- Add cocoa powder and food coloring if desired, mixing until combined.
- Smooth the top and refrigerate for at least 4 hours or until set.
