A comforting and delicious Mexican Chicken Casserole that the whole family will love.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can black beans, drained
  • 1 can corn, drained
  • 1 cup salsa
  • 2 cups shredded cheese
  • 1/2 cup sour cream
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 package tortilla chips

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine shredded chicken, black beans, corn, salsa, sour cream, cumin, and chili powder.
  3. In a baking dish, layer half of the tortilla chips, followed by half of the chicken mixture, and top with half of the cheese.
  4. Repeat the layers and finish with the remaining cheese on top.
  5. Bake in the preheated oven for 25-30 minutes until the cheese is bubbly.

Notes

  • For a spicier dish, add diced jalapeños to the chicken mixture.
  • Feel free to customize the toppings with your favorite ingredients.
