A comforting and hearty lasagna soup made with turkey bacon and chicken ham, perfect for a cozy meal.

  • 4 slices turkey bacon
  • 1 cup chicken ham, diced
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups chicken broth
  • 8 ounces lasagna noodles, broken into pieces
  • 2 teaspoons Italian seasoning
  • Salt and pepper to taste
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. Add diced chicken ham, onion, and garlic to the pot and sauté until the onion is translucent.
  3. Stir in crushed tomatoes, chicken broth, broken lasagna noodles, and Italian seasoning. Bring to a boil.
  4. Reduce heat and simmer until the noodles are tender, about 15 minutes.
  5. Season with salt and pepper to taste.
  6. Serve topped with a dollop of ricotta cheese, shredded mozzarella, and crumbled turkey bacon.

Notes

  • You can swap turkey bacon for regular bacon if preferred.
  • Store leftovers in the refrigerator for up to 3 days.
