  • 2 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • Salt to taste
  • Pepper to taste
  • 4 slices sandwich bread
  • 2 slices turkey bacon
  • 1 tablespoon butter

Instructions

  1. Cook the turkey bacon in a skillet over medium heat until crispy. Set aside.
  2. In a bowl, whisk the eggs, mayonnaise, mustard, salt, and pepper together.
  3. Pour the egg mixture into the skillet and cook over medium-low heat, stirring gently until the eggs are softly scrambled.
  4. Spread butter on one side of each slice of bread.
  5. Place a slice of bread, butter side down, in the skillet and add the scrambled eggs and turkey bacon on top.
