  • 1/2 cup grated carrots
  • 1/2 cup almond flour
  • 1/4 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup raisins or walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine rolled oats, grated carrots, almond flour, cinnamon, baking soda, and salt.
  3. In another bowl, mix honey (or maple syrup) and melted coconut oil.
  4. Combine the wet and dry ingredients and mix well.
  5. Add in raisins or walnuts if using.
  6. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  7. Bake for 15-20 minutes until golden brown.
  8. Allow to cool before serving.
