  • 200 grams glass noodles
  • 500 grams ground chicken
  • 4 cups chicken broth
  • 3 tablespoons miso paste
  • 2 green onions, chopped
  • 1 teaspoon ginger, grated
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 carrot, sliced
  • 1 cup spinach
  • 1 tablespoon sesame seeds for garnish

Instructions

  1. In a large pot, heat sesame oil over medium heat. Add garlic and ginger, sauté until fragrant.
  2. Add ground chicken, breaking it apart, and cook until no longer pink.
  3. Pour in chicken broth and bring to a boil.
  4. Stir in miso paste and soy sauce until well incorporated.
  5. Add carrots and glass noodles, cooking until noodles are tender.
  6. Mix in spinach and green onions just before serving.
  7. Serve hot, garnished with sesame seeds.
