Ingredients

  • 1 pound cooked shrimp, peeled and deveined
  • 1 cup fresh lime juice
  • 1/2 cup red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • 1 cup cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine shrimp and lime juice. Let sit for 30 minutes to marinate.
  2. Add onion, jalapeño, cucumber, tomatoes, and cilantro. Stir gently to combine.
  3. Season with salt and pepper to taste.
  4. Serve chilled with tortilla chips or on its own.

Notes

  • For a spicier kick, leave some seeds from the jalapeño.
