A deliciously moist double chocolate zucchini bread that is guilt-free and indulgent.

Ingredients

  • 1 cup grated zucchini
  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 cup sugar
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, mix together the grated zucchini, oil, sugar, eggs, and vanilla.
  3. In another bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt.
  4. Gradually add dry ingredients to the wet ingredients.
  5. Fold in the chocolate chips.
  6. Pour the batter into a greased loaf pan.
  7. Bake for 50-60 minutes or until a toothpick comes out clean.
  8. Allow to cool before slicing.

Notes

  • For an extra indulgent treat, top with chocolate ganache.
