Delicious creamy pesto chicken served with roasted tomatoes and spinach. A quick and easy recipe for busy weeknights.

  • 2 cups spinach
  • 1 pound chicken breasts
  • 1/2 cup pesto sauce
  • 1 cup cherry tomatoes
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a baking dish, combine the cherry tomatoes, olive oil, salt, and pepper. Toss to coat.
  3. Place chicken breasts on top and spread pesto over the chicken.
  4. Bake for 25-30 minutes or until the chicken is cooked through.
  5. During the last 5 minutes of baking, add spinach to the dish and sprinkle with Parmesan.
  6. Serve hot, garnished with additional pesto if desired.

Notes

  • For extra flavor, marinate the chicken in pesto for 30 minutes before baking.
