A warm and hearty creamy mushroom soup featuring delicious turkey bacon.

Ingredients

  • 4 slices turkey bacon
  • 1 pound mushrooms, sliced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and crumble it.
  2. Add olive oil to the pot, then sauté onions and garlic until translucent.
  3. Add mushrooms and cook until they’re tender and browned.
  4. Pour in the vegetable broth and bring to a boil. Reduce heat and let simmer for 15 minutes.
  5. Stir in the heavy cream, thyme, salt, and pepper. Cook for another 5 minutes.
  6. Blend the soup until smooth, if desired, and stir in the crumbled turkey bacon.
  7. Serve hot, garnished with fresh herbs.

Notes

  • For a vegetarian version, omit the turkey bacon or substitute with a plant-based alternative.
