- 4 slices turkey bacon
- 1 pound mushrooms, sliced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- 2 tablespoons olive oil
- 1 teaspoon thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- In a large pot, cook the turkey bacon over medium heat until crispy. Remove and crumble it.
- Add olive oil to the pot, then sauté onions and garlic until translucent.
- Add mushrooms and cook until they’re tender and browned.
- Pour in the vegetable broth and bring to a boil. Reduce heat and let simmer for 15 minutes.
- Stir in the heavy cream, thyme, salt, and pepper. Cook for another 5 minutes.
- Blend the soup until smooth, if desired, and stir in the crumbled turkey bacon.
