A delicious and comforting creamy mushroom soup made with turkey bacon, perfect for chilly days.

Ingredients

  • 1 tablespoon olive oil
  • 4 slices turkey bacon
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add turkey bacon and cook until crispy. Remove from pot and set aside.
  3. In the same pot, add onion and garlic, sauté until translucent.
  4. Add mushrooms and cook until tender.
  5. Pour in vegetable broth and thyme, bring to a simmer.
  6. Stir in heavy cream, season with salt and pepper.
  7. Simmer for another 10 minutes.
  8. Slice the turkey bacon and serve on top of the soup.

Notes

  • For a vegetarian version, omit the turkey bacon.
  • Feel free to add more herbs for flavor.
