  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1 cup Parmesan cheese, grated
  • 2 cups spinach, chopped
  • 1 cup mushrooms, sliced
  • 1 cup zucchini, diced
  • 1 cup bell pepper, diced
  • 1 jar (24 oz) marinara sauce
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions.
  3. In a bowl, mix ricotta cheese, spinach, garlic powder, Italian seasoning, salt, and pepper.
  4. Spread a layer of marinara sauce on the bottom of a baking dish.
  5. Layer noodles, ricotta mixture, vegetables, and mozzarella cheese.
  6. Repeat the layers until all ingredients are used, finishing with sauce and mozzarella on top.
  7. Bake for 30-35 minutes until golden and bubbly.
  8. Let it cool for a few minutes before slicing.
