  • 1 cup cooked chicken, shredded
  • 3 large eggs
  • 1/4 cup fresh lemon juice
  • 1/2 cup orzo pasta
  • Salt and pepper to taste

Instructions

  1. In a pot, bring the chicken broth to a simmer.
  2. Add the orzo pasta and cook according to package instructions until al dente.
  3. In a bowl, whisk together eggs and lemon juice until smooth.
  4. Temper the egg mixture by slowly adding a ladle of hot broth to it while whisking constantly.
  5. Pour the tempered egg mixture back into the pot, stirring gently.
  6. Add shredded chicken and heat through without boiling.
  7. Season with salt and pepper to taste before serving.
