  • 1 cup graham cracker crumbs
  • 1/4 cup melted butter
  • 2 packages (8 oz each) cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup apple cider
  • 1 teaspoon cinnamon

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Mix graham cracker crumbs with melted butter and press into the bottom of a springform pan.
  3. In a large bowl, beat the cream cheese until smooth.
  4. Add sugar and vanilla, and continue mixing.
  5. Add eggs one at a time, mixing well after each addition.
  6. Stir in apple cider and cinnamon until well combined.
  7. Pour the filling over the crust and smooth the top.
  8. Bake for 50-60 minutes or until set.
  9. Let cool, then refrigerate for at least 4 hours before serving.
