A delicious and healthy twist on traditional alfredo using zucchini noodles.

Ingredients

  • 2 large zucchinis, spiralized
  • 1 pound chicken breast, diced
  • 2 tablespoons olive oil
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1/4 teaspoon nutmeg (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the diced chicken and cook until golden brown.
  2. Add the minced garlic and cook for an additional minute.
  3. Pour in the heavy cream and stir well.
  4. Reduce the heat and mix in the Parmesan cheese until melted and smooth.
  5. Season with salt, pepper, and nutmeg.
  6. Add the spiralized zucchini and toss to coat with the sauce. Cook for 2-3 minutes until the zucchini is tender.

Notes

  • For extra flavor, you can add Italian herbs.
