  • ½ cup pistachios, shelled
  • ½ cup dried cranberries
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup fresh parsley, chopped

Instructions

  1. Rinse the wild rice under cold water.
  2. In a pot, heat olive oil over medium heat and sauté the onion and garlic until fragrant.
  3. Add the wild rice and sauté for another 2-3 minutes.
  4. Pour in the vegetable broth, salt, and pepper.
  5. Bring to a boil, then reduce heat to low and cover. Cook for about 45-50 minutes until rice is tender.
  6. Stir in pistachios, cranberries, and parsley before serving.
