This comforting and easy-to-make White Chicken Lasagna Soup combines creamy broth, tender chicken, and lasagna noodles for a heartwarming meal.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 pound cooked shredded chicken
  • 6 cups chicken broth
  • 8 ounces lasagna noodles broken into pieces
  • 1 cup ricotta cheese
  • 2 cups spinach fresh
  • 1 teaspoon Italian seasoning
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until the onion is translucent.
  2. Stir in the shredded chicken and pour in the chicken broth. Bring to a boil.
  3. Add the lasagna noodles and cook according to package instructions until al dente.
  4. Reduce the heat and stir in the ricotta cheese and spinach until the spinach wilts and the cheese is melted.
  5. Season with Italian seasoning, salt, and pepper. Serve topped with mozzarella and Parmesan cheese.

Notes

  • For extra creaminess, add a splash of heavy cream.
  • Leave out the cheese for a lighter version if desired.
