- 1 pound boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 tablespoon ground cumin
- 1 teaspoon chili powder
- 4 cups chicken broth
- 2 cans white beans, drained and rinsed
- 1 can diced green chilies
- 1 cup corn
- 1 cup heavy cream
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup cilantro, chopped
- In a large pot, heat olive oil over medium heat.
- Add diced onion and sauté until soft.
- Stir in garlic, cumin, and chili powder; cook for another minute.
- Add chicken breasts, chicken broth, white beans, green chilies, and corn. Bring to a boil.
- Reduce heat and simmer until chicken is cooked through, about 20 minutes.
- Remove chicken, shred it, and return it to the pot.
- Stir in heavy cream, salt, and pepper. Simmer for another 5 minutes.
- Garnish with cilantro before serving.
Notes
- For added heat, include diced jalapeños.
- Can be served with tortilla chips or cornbread.
