A delicious and nutritious egg bake loaded with veggies and cottage cheese.

  • 1 cup cottage cheese
  • 4 large eggs
  • 1 cup spinach, chopped
  • 1/2 cup bell pepper, diced
  • 1/2 cup onion, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the cottage cheese and eggs, whisking until smooth.
  3. Add in the chopped spinach, bell pepper, onion, salt, pepper, and garlic powder, mixing well.
  4. Pour the mixture into a greased baking dish.
  5. Bake for 25-30 minutes or until the eggs are set.
