  • 1/2 cup cornmeal
  • 2 large eggs
  • 2 cloves garlic, minced
  • 1 teaspoon salt

  • 1/4 teaspoon paprika
  • 1/4 teaspoon cumin
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon olive oil

Instructions

  1. In a bowl, combine grated zucchini and carrots.
  2. Add flour, cornmeal, eggs, garlic, salt, pepper, paprika, and cumin; mix well.
  3. Stir in parsley and olive oil.
  4. Heat a skillet over medium heat and add oil.
  5. Drop spoonfuls of the mixture into the skillet, flattening slightly.
  6. Cook until golden brown, about 3-4 minutes on each side.
  7. Remove and drain on paper towels.
