  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 4 cups vegetable broth
  • 2 cups diced tomatoes
  • 1 cup green beans, chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 cups spinach leaves

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook until the vegetables are tender, about 5 minutes.
  3. Add the garlic and cook for another minute.
  4. Pour in the vegetable broth and diced tomatoes; bring to a boil.
  5. Add the green beans, thyme, basil, salt, and pepper. Reduce heat and let simmer for 20 minutes.
