A delicious and easy recipe for Vegan Ginger Sesame Noodles topped with crispy tofu for a delightful meal.

  • 8 ounces rice noodles
  • 1 tablespoon sesame oil
  • 2 tablespoons soy sauce
  • 2 teaspoons fresh ginger, minced
  • 1 clove garlic, minced
  • 1 tablespoon lime juice
  • 1 cup bell peppers, sliced
  • 1 cup carrots, julienned
  • 1 block firm tofu, pressed and cubed
  • 1 tablespoon cornstarch
  • 2 tablespoons green onions, chopped
  • 1 tablespoon sesame seeds

Instructions

  1. Cook the rice noodles according to package instructions; drain and set aside.
  2. In a skillet, heat sesame oil over medium heat. Add the ginger and garlic, sauté until fragrant.
  3. Add the bell peppers and carrots; stir-fry for 5 minutes.
  4. Mix in the cooked noodles, soy sauce, and lime juice.
  5. In a separate pan, toss the cubed tofu with cornstarch and pan-fry until golden brown and crispy.
  6. Serve the noodles topped with crispy tofu and garnish with green onions and sesame seeds.

Notes

  • For added flavor, marinate tofu in soy sauce before cooking.
  • This dish can be served warm or cold.
