- 4 large russet potatoes
- 6 strips turkey bacon
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup green onions, chopped
- 4 tablespoons butter
- 1 teaspoon garlic powder
- Salt to taste
- Black pepper to taste
- Preheat the oven to 400°F (200°C).
- Wash and pierce the potatoes with a fork. Bake for 45-60 minutes or until tender.
- Meanwhile, cook the turkey bacon in a skillet until crispy. Remove and crumble.
- Once the potatoes are done, let cool slightly. Cut them in half and scoop out the insides into a bowl.
- Add butter, sour cream, garlic powder, crumbled bacon, and half of the cheese to the potato insides. Mix well.
- Fill the potato skins with the mixture, top with remaining cheese, and sprinkle with green onions.
- Return to the oven for another 15-20 minutes until cheese is melted and bubbly.
Notes
- For a healthier option, you can use low-fat cheese and sour cream.
- Great for meal prep; can be made ahead and frozen.
