A delicious twist on classic baked potatoes, stuffed with turkey bacon and cheese for a delightful meal.

Ingredients

  • 4 large russet potatoes
  • 6 strips turkey bacon
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup green onions, chopped
  • 4 tablespoons butter
  • 1 teaspoon garlic powder
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the potatoes with a fork. Bake for 45-60 minutes or until tender.
  3. Meanwhile, cook the turkey bacon in a skillet until crispy. Remove and crumble.
  4. Once the potatoes are done, let cool slightly. Cut them in half and scoop out the insides into a bowl.
  5. Add butter, sour cream, garlic powder, crumbled bacon, and half of the cheese to the potato insides. Mix well.
  6. Fill the potato skins with the mixture, top with remaining cheese, and sprinkle with green onions.
  7. Return to the oven for another 15-20 minutes until cheese is melted and bubbly.

Notes

  • For a healthier option, you can use low-fat cheese and sour cream.
  • Great for meal prep; can be made ahead and frozen.
