  • 1 tablespoon olive oil
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon salt
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels
  • 1/2 cup diced red onion
  • 1 avocado, sliced
  • 1/4 cup cilantro, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and dice the sweet potatoes, then toss with olive oil, cumin, chili powder, and salt.
  3. Spread on a baking sheet and roast for 25-30 minutes or until tender.
  4. In a bowl, combine black beans, corn, and red onion.
  5. Once sweet potatoes are done, mix them with the black bean mixture.
