  • 8 ounces rotini pasta
  • 2 ears corn, grilled and kernels removed
  • 4 slices turkey bacon, cooked and chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup diced red onion
  • 1/2 cup fresh cilantro, chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Cook the rotini pasta according to the package instructions. Drain and set aside.
  2. In a large bowl, combine the grilled corn, turkey bacon, cherry tomatoes, red onion, cilantro, and feta cheese.
  3. Add the cooked pasta to the bowl and mix well.
  4. In a separate small bowl, whisk together lime juice, olive oil, chili powder, salt, and pepper.
  5. Pour the dressing over the pasta salad and toss to combine.
