Deliciously stuffed mushrooms filled with spinach, feta, and sun-dried tomatoes make for a perfect appetizer.

Ingredients

  • 12 large mushrooms
  • 1 cup fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/3 cup sun-dried tomatoes, chopped
  • 1/4 cup cream cheese, softened
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté garlic until fragrant.
  3. Add the chopped spinach and cook until wilted.
  4. In a bowl, mix together the cooked spinach, feta cheese, sun-dried tomatoes, cream cheese, salt, and pepper.
  5. Remove the stems from the mushrooms and fill each cap with the cheese mixture.
  6. Place the stuffed mushrooms on a baking sheet and bake for 20 minutes.
  7. Serve warm.

Notes

  • For added flavor, sprinkle some Parmesan cheese on top before baking.
  • These can be made ahead of time and baked just before serving.
