- 1 pound sushi rice
- 2 cups water
- 1/4 cup rice vinegar
- 2 tablespoons sugar
- 1 teaspoon salt
- 1 pound fresh salmon, skinless and boneless
- 1/4 cup mayonnaise
- 2 tablespoons sriracha sauce
- 1 teaspoon sesame oil
- 2 green onions, chopped
- 1 sheet nori, cut into strips
- 1 tablespoon sesame seeds
- Preheat your oven to 350°F (175°C).
- Rinse sushi rice under cold water until the water runs clear.
- In a pot, combine sushi rice and water and bring to a boil.
- Cover, lower heat, and let it simmer for 20 minutes.
- In a small bowl, combine rice vinegar, sugar, and salt, then stir until dissolved.
- Once rice is cooked, mix in vinegar mixture and let cool.
- While rice cools, prepare the salmon mixture by combining salmon, mayonnaise, sriracha, and sesame oil in a bowl.
- Spread the sushi rice evenly in a baking dish.
- Top the rice with the salmon mixture.
- Bake in the oven for 15-20 minutes until the salmon is cooked through.
- Garnish with green onions, nori strips, and sesame seeds before serving.
