Smoky Poblano Chicken & Black Bean Soup

A delicious and warming soup made with smoky poblano peppers, tender chicken, and hearty black beans.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken thighs
  • 2 poblano peppers, diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 can (15 ounces) black beans, rinsed and drained
  • 4 cups chicken broth
  • 1 lime, juiced
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the chicken and cook until browned on both sides.
  3. Remove chicken and set aside. In the same pot, add poblano peppers, onion, and garlic. Sauté until soft.
  4. Stir in cumin and smoked paprika, cooking for another minute.
  5. Add back the chicken, black beans, and chicken broth. Bring to a boil.
  6. Reduce heat, cover, and simmer for 20 minutes or until chicken is cooked through.
  7. Remove chicken, shred it, and return to the pot. Stir in lime juice and season with salt and pepper.
  8. Serve hot.

  • Add toppings like cilantro, avocado, or sour cream for extra flavor.
