  • 4 large cucumbers
  • 1 tablespoon salt
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 tablespoon sugar
  • 2 green onions, sliced
  • 1 tablespoon sesame seeds

Instructions

  1. Start by washing the cucumbers and cutting them in half lengthwise.
  2. Place the cucumbers on a cutting board and gently smash them with a rolling pin or a heavy object until they crack open.
  3. Sprinkle the smashed cucumbers with salt and let them sit for about 10 minutes to draw out excess moisture.
  4. In a bowl, mix together the rice vinegar, sesame oil, minced garlic, and sugar.
  5. After 10 minutes, rinse the cucumbers under cold water and pat them dry.
  6. Combine the cucumbers with the dressing and toss to coat.
  7. Add sliced green onions and sesame seeds on top before serving.

Notes

  • For added spice, consider adding a few red pepper flakes.
