- 2 pounds flank steak
- 3 bell peppers (any color)
- 1 large onion
- 4 cloves garlic
- 1 cup beef broth
- 1/4 cup soy sauce
- 1 tablespoon cornstarch
- 1 tablespoon olive oil
- 1 teaspoon black pepper
- 1 teaspoon salt
- Slice the flank steak into thin strips.
- Chop the bell peppers and onion.
- Add the olive oil to the slow cooker, then layer the steak, peppers, and onion.
- Mince the garlic and add it to the slow cooker.
- In a bowl, mix the beef broth, soy sauce, cornstarch, salt, and pepper, then pour it over the meat and veggies.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
