A hearty and delicious slow cooker recipe for corned beef and cabbage stew that is both easy to make and comforting.

  • 4 pounds corned beef brisket
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 6 cups beef broth
  • 1 small head of cabbage, chopped
  • 4 carrots, sliced
  • 5 potatoes, diced
  • 1 tablespoon black peppercorns
  • 2 bay leaves
  • 1 tablespoon mustard seeds

Instructions

  1. Place the corned beef in the slow cooker and add onion and garlic on top.
  2. Pour the beef broth over the corned beef.
  3. Add cabbage, carrots, potatoes, black peppercorns, bay leaves, and mustard seeds to the slow cooker.
  4. Cover and cook on low for 8-10 hours, or until the meat is tender.
  5. Once done, remove the corned beef, slice it, and serve with the vegetables.
