2 pounds chicken thighs
4 cups chicken broth
3 cups mixed vegetables (carrots, peas, corn)
1 medium onion, diced
3 cloves garlic, minced
2 teaspoons dried thyme
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons olive oil
2 tablespoons cornstarch (optional, for thickening)
Instructions
Heat olive oil in a skillet over medium heat. Sear the chicken thighs until golden brown, about 5 minutes per side.
Transfer the seared chicken to the slow cooker.
Add the chicken broth, mixed vegetables, onion, garlic, thyme, salt, and pepper to the slow cooker.
Cover and cook on low for 6-8 hours or until the chicken is cooked through and tender.
If you prefer a thicker stew, mix cornstarch with a few tablespoons of water to create a slurry and stir it into the stew during the last 30 minutes of cooking.
Shred the chicken before serving and mix it back into the stew.
