  • 1 pound boneless, skinless chicken breasts
  • 1 package gnocchi
  • 4 cups chicken broth
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a slow cooker, combine chicken, broth, onion, carrots, celery, garlic, and Italian seasoning.
  2. Cook on low for 6-7 hours or high for 3-4 hours until the chicken is cooked through.
  3. Remove the chicken, shred it, and return it to the slow cooker.
  4. Add gnocchi and spinach, stir, and let it cook for an additional 30 minutes.
  5. Stir in heavy cream and season with salt and pepper as needed before serving.
