2 pounds beef chuck, cut into chunks
4 cups beef broth
3 medium carrots, sliced
3 medium potatoes, diced
1 large onion, chopped
3 cloves garlic, minced
1 tablespoon Worcestershire sauce
2 teaspoons dried thyme
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon cornstarch (optional, for thickening)
Instructions
In a slow cooker, combine beef, broth, carrots, potatoes, onion, garlic, Worcestershire sauce, thyme, salt, and pepper.
Cover and cook on low for 8 hours or on high for 4 hours until the beef is tender.
If desired, mix cornstarch with a small amount of cold water and stir into the stew to thicken it. Cook for an additional 30 minutes.
