  • 4 slices turkey bacon
  • 1 pound ground turkey
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 cups vegetable broth
  • 2 cups potatoes, diced
  • 1 cup carrots, sliced
  • 1 cup peas
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and chop.
  2. Add ground turkey to the pot and cook until browned.
  3. Add onion and garlic; sauté until softened.
  4. Pour in vegetable broth and bring to a simmer.
  5. Add potatoes, carrots, peas, Worcestershire sauce, thyme, rosemary, salt, and pepper.
  6. Simmer until vegetables are tender, about 20 minutes.
  7. Stir in the chopped turkey bacon before serving.
