  • 4 cups mashed sweet potatoes
  • 1 cup brown sugar
  • 1/2 cup milk
  • 1/2 cup butter, melted
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1 cup mini marshmallows

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the mashed sweet potatoes, brown sugar, milk, melted butter, eggs, vanilla extract, cinnamon, nutmeg, and salt. Mix until smooth.
  3. Transfer the sweet potato mixture to a greased baking dish and smooth the top.
  4. Bake in the preheated oven for 30 minutes.
  5. Remove from the oven and sprinkle mini marshmallows evenly over the top.
  6. Return to the oven and bake for an additional 10-15 minutes, until the marshmallows are golden brown.
  7. Allow to cool slightly before serving.

Notes

  • For a crunchier topping, you can add pecans or walnuts along with the marshmallows.
