Raspberry Chocolate Ganache Cake

A rich and decadent chocolate ganache cake topped with fresh raspberries.

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup heavy cream
  • 6 ounces bittersweet chocolate, chopped
  • 1 cup fresh raspberries

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a cake pan.
  2. In a mixing bowl, combine flour, cocoa powder, sugar, butter, eggs, and vanilla. Mix until smooth.
  3. Add baking powder and salt, then stir until combined.
  4. Pour the batter into the prepared cake pan and bake for 25-30 minutes.
  5. While the cake is baking, heat the heavy cream until just simmering.
  6. Pour the hot cream over the chopped chocolate and let it sit for a few minutes, then stir until smooth.
  7. Once the cake has cooled, pour the ganache over the top and let it drip down the sides.
  8. Top with fresh raspberries before serving.

Notes

  • For extra flavor, add a teaspoon of espresso powder to the batter.
  • Serve with whipped cream for an added indulgence.
