A delicious and nutritious quinoa bowl featuring turkey bacon and fresh vegetables for a quick meal.

Ingredients

  • 1 cup quinoa
  • 4 slices turkey bacon
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 bell pepper, diced
  • 1 avocado, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Cook quinoa according to package instructions and set aside.
  2. While quinoa is cooking, in a skillet, cook turkey bacon until crispy. Remove and chop into pieces.
  3. In a large bowl, combine cooked quinoa, chopped turkey bacon, cherry tomatoes, cucumber, bell pepper, and avocado.
  4. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper. Pour over the quinoa mixture and toss gently.
  5. Serve immediately or chill in the fridge for later.
