  • 1 pound boneless, skinless chicken breasts
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 1 packet taco seasoning
  • 4 cups chicken broth
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 lime, juiced
  • 1 cup shredded cheese (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion and garlic, sauté until softened.
  2. Add chicken breasts, taco seasoning, chicken broth, black beans, corn, and diced tomatoes. Stir well.
  3. Bring to a boil, then reduce heat and simmer for 20-25 minutes until chicken is cooked through.
  4. Remove chicken from the pot, shred with two forks, and return to the soup.
  5. Stir in lime juice and season with salt and pepper to taste.
  6. Serve hot, topped with shredded cheese if desired.
