  • 2 cups all-purpose flour
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/4 tsp salt
  • 1 cup powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix pumpkin puree, brown sugar, granulated sugar, and vegetable oil until well combined.
  3. Add eggs one at a time, mixing well after each addition.
  4. In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  7. Roll the dough balls in powdered sugar before baking.
  8. Bake for 12-15 minutes or until edges are firm and tops are crinkled.
  9. Let cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

  • For an extra touch, add chocolate chips to the dough.
