A creamy and comforting dish that layers thinly sliced potatoes and root vegetables, baked until golden and bubbly.

Ingredients

  • 3 large potatoes
  • 2 carrots
  • 1 parsnip
  • 1 onion
  • 2 cups heavy cream
  • 1 cup grated cheese
  • 2 cloves garlic
  • 1 tablespoon fresh thyme
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Thinly slice the potatoes, carrots, parsnip, and onion.
  3. In a baking dish, layer the sliced vegetables, seasoning each layer with salt, pepper, and thyme.
  4. In a saucepan, heat the heavy cream and minced garlic until just boiling, then pour over the layered vegetables.
  5. Top with grated cheese.
  6. Cover with foil and bake for 45 minutes, then remove the foil and bake for an additional 15 minutes or until golden brown.
