Pickled Shrimp

  • 1 pound shrimp, peeled and deveined
  • 1 cup white vinegar
  • 1/2 cup water
  • 1/4 cup olive oil
  • 1 tablespoon mustard seeds
  • 1 tablespoon peppercorns
  • 3 garlic cloves, smashed
  • 1 bay leaf
  • 1/2 teaspoon red pepper flakes
  • 1 lemon, sliced

Instructions

  1. In a saucepan, combine vinegar, water, olive oil, mustard seeds, peppercorns, garlic, bay leaf, and red pepper flakes.
  2. Bring the mixture to a boil, then remove from heat.
  3. Add the shrimp to the mixture and stir to coat.
  4. Let cool to room temperature, then add the lemon slices.
  5. Transfer to a jar and refrigerate for at least 24 hours before serving.
